Chocolate Chip Cookies!


For those of you who know me, you won't be surprised when a food post pops up on here. I've always been into baking so I thought I would share one of my favourite recipes with you all.

I made these cookies the other day and I THINK I may have finally got them exactly the way I want them. Slightly crunchy on the outside and soft in the middle. mmmmmmmm!

You will need: 150g butter, 80g light brown sugar, 80g granulated sugar, 2 tsp vanilla extract, 1 large egg, 225g plain flour, 1/2 tsp bicarbonate of soda and 200g chocolate chips

Preheat the over to 190C/gas mark 5, and line some baking trays with non-stick baking paper.

I find it's best to beat the butter on its own until its white and creamy before adding the sugars. When all of that is fully combined, beat in the vanilla and egg. Then sieve in the flour and bicarbonate of soda, When that has been folded in nicely, finally stir in the chocolate chunks with a wooden spoon until they have been incorporated well.

Then, onto the baking trays, pop small mounds of the mixture and make sure that they are not too close together.

Bake in the middle shelf for 7-10 minutes until they are very lightly brown on the edges. Let them cool for a couple of minutes in the tray and then transfer to a wire cooling rack.

If you wish to save the cookie dough until late, roll the dough into cylinders around 2 inches wide, wrap in cling film and leave in the fridge to cool. When you come to use it, the dough would have hardened so just simply slice this and put the slices on lined baking trays. The dough should last for about a week in the fridge! 

Enjoy warm with a big glass of cold milk or even vanilla ice cream!
