Eaton Mess



So first of all, welcome to 2014! Wow, my first blog post of the year is on the 21st January! I do apologise for not posting as much as I had hoped, I have been swamped with assignments and exams, but now that they are all done, and my dissertation has finally been given in, I’m ready to start the New Year with lots of new blog posts! Yay!

Here we go then! 

I thought I would start off with a little dessert, I don’t really know what it’s called as I had actually attempted to make cheesecake but I obviously didn’t whip the mixture enough! Oops!
Imagine a melted raspberry cheesecake…

You will need:
600g Philadelphia soft cheese
300ml Double cream
100g Sugar
100g Digestive biscuits
Meringue shells
400g Raspberries
200g Fresh strawberries  

1. So first off you need to whisk together the soft cheese and the double cream until they are combined properly and smooth, then add the sugar to taste and distribute into separate bowls.

2. In a food processor or blender, blitz the raspberries until smooth. You can even add some sugar in if you like. Then pour this over the cream mixture in the bowls. 

3. Crumble up the biscuits and meringue shells and scatter on top. 

4. Cut up the strawberries and distribute evenly. 

Best served cool!

This is a fab dessert which is quick and easy to make and taste yumm!
