Raspberry, Blueberry and Peach Pancakes



Okay I know that WDT has been very foodie recently but I have been trying lots of new things and this is one of them! These are those thick, spongey pancakes, you know like they have in the US, and they literally taste so delicious, no matter what you put on them. (within reason obvs). They are so easy and simple to make and they only take a couple of minutes. PERFECT for breafast, lunch or dinner! hahah.

You Will Need:
  • 225g plain flour
  • 1 tbsp baking powder
  • 1 tsp white sugar
  • 30g butter
  • 2 large eggs (beaten)
  • 300ml milk 
  • 5 strawberries
  • A handful of blueberries
  • 1 Peach 
  • Golden Syrup
As is said, they are literally so so easy to make! You literally just bang all of the ingredients together and mix well until you have a smooth batter. I like to do it in a blender (less arm strength is required) and then it's ready to go.

Heat up a pan with a little bit of butter and pour the batter into it. You can make them as big or as little as you like.

TIP: when it starts bubbling on top, you know it's time to flip!

You are left with the most amazing golden brown pancakes! I usually get around 6 medium sized ones out of this batter.

You could literally put anything you want on top. You could keep it simple with just some maple syrup, but this is my favourite. I just chop up the fruit and dollop (lol) and then drizzle the syrup on top.
