RECIPE: Banana and Choc Chip Muffins

Yesssss, I know I haven’t been around lately, and I have no excuses, BUT I AM BACK! HOOORAHHHH

And today, I have a very exciting recipe for you guys! Banana and choc chip muffins! These muffins are deliciously moist and the combination of banana and chocolate is absolutely to die for. They are very much ‘breakfast’ muffins, but I like them all day every day! Hahaha. They take around 15 minutes to make, and then around 25 minutes in the oven. This recipe makes 12 muffins. Super easy, and super delicious! What else could you ever want?!

Okay, so first things first, you will need:

·         100g Softened butter
·         2 Eggs
·         175g Golden caster sugar
·         225g Self-raising flour
·         1 tsp Baking powder
·         3 tbsp Whole milk
·         2 Very ripe bananas (mashed)
·         100g Chocolate chips

Once you have preheated the oven to 180°C and lined your muffin trays with paper cases, you can literally just chuck all of the ingredients into a bowl and beat it until it is all nice and smooth. Spoon this mixture into the paper cases and pop in the oven for around 25 minutes. Or until a skewer comes out clean – you know the drill! They should be a nice golden brown colour, and they will smell amazing! Once they are done, remove from the muffin tray and place on a cooling rack for a bit.
